Arugula skewers, dried tomatoes and homemade canned mackerel

It is already a weekend and by the time of the vermouth we have prepared some original arugula skewers, dried tomatoes and homemade canned mackerel, perfect to start a snack-based meal, of which both fancy in good weather.

To make this recipe, we will start with a homemade mackerel can, but if you have not dared to make it with our super easy recipe, you can also make the skewers with tin mackerel, choosing a quality one.

How to make arugula skewers, dried tomatoes, and homemade canned mackerel

This recipe is one of those very simple that when the tests you are surprised by how rich they are and how little it has taken you to prepare them. These skewers being so good, how can we not do them more often?

Cut the slices of bread and toast them so that they are crispy. While they are roasted, we prepare an arugula pesto with 30 g of pine nuts, 30 g of arugula and 30 of Parmesan cheese, two cloves of garlic and a good dash of olive oil. We crush and reserve. You can also use a homemade or purchased basil pesto if you don’t want to waste time.

Then, as you will see in the images below, we cover the slices of bread with arugula dressed with extra virgin olive oil. On the arugula, we put two pieces of dried tomatoes and on them a good portion of mackerel.

Finish the skewers, putting a little of our arugula pesto on one end of the mackerel and decorate with a coriander flower or any other aromatic. We serve immediately with our favorite beverage. I recommend a very cold white wine.
